Gram’s Zuccini Loaf

In a mixer beat:
3 eggs
1 c vegetable oil
2 c sugar
2 tsp vanilla
Beat until thick and foamy and then stir in
2 c coarsely shredded zucchini
1 c crushed pineapple (drained)
Combine
3 c flour
2 tsp baking soda
1 tsp salt
½ tsp baking powder
1 ½ tsp cinnamon
¾ tsp nutmeg
1 c raisins

Stir the flour mix into the zucchini mixture until blended. Pour into 2 greased and floured 9x5 loaf pans. Bake in a 350 deg F oven for 1 hour. Cool in the pans for 10 minutes before turning out onto a rack to cool.
