1 ¾ c flour
½ tsp salt
2 c rolled oats
½ c coconut or walnuts
1 c vegetable oil
1 c brown sugar
1 tsp baking soda
¼ c boiling water (dissolve the baking soda in the water)
1 tsp vanilla
Mix all the ingredients together and drop by spoonfuls onto a greased baking sheet and flatten with a fork. Bake at 350 deg F for 12-15 minutes.
