Fruit Mincemeat

Yield: 2 quarts

2 c seeded raisins
3 c cut mixed candied peel
2 ¾ c brown sugar (firmly packed)
8 c unsweetened applesauce
3 c currants
2 lemons, juice and zest
1 tsp nutmeg
1 tsp cloves
1 tsp cinnamon
¼ c sherry
½ c cold water

Combine ingredients in the order listed. Cook over a low flame for 20 minutes. Seal in sterile jars.
